Ciao from Germany,
I hope, it is okay to post in English. I am sorry, I don't speak italian well.
First of all, thanks for your great site and the english version, so that I can have the previlege to try to make a pizza dough how it's supposed to be made. I want to learn how to make a good pizza at home, so you're articles have helped me very much. The italians are of course the masters of food and life style, so I want to learn from the best 🙂

Now, when I make a pizza, I sometimes have trouble timing the exact moments that I can put my topping on it. Do I use the same time for Mozzarella and mushrooms and tuna for example or do I gradually wait some time. I know Mozzarella should be added last. How about mushrooms? They tend to get dry when I just put fresh ones on my pizza. And how about onions. How do I prepare them to make them taste good on a pizza? Is there a rule, that deals with fish, vegetables and other ingredients?
