Ciao.I have just arived back in New Jersey from an exciting and wonderful trip in search of Pizza and happiness!I found it in London,Milan,Rome and Tivoli. From finding this forum I was able to begin my quest to learn the art of the Forno Legna and some methods of the production of the paste. My teacher in Rome, Tonino, was very kind and taught me the importance of the correct measurements and temperatures, and how just a little change can alter the final product.I spent many hours on trains travelling and speaking to strangers explaining why I had come to Italy. Some laughed, but all were pleased that I had come to the 'Home' of Pizza to learn the trade.
In London I met a kind Pizza maker,(Alessandro from Salerno I think ?) at the 'Pizzeria Napulo' in Fulham, where I tasted a beautiful Pizza. As he worked ,he took the time to speak to me and explain all that he could, and was dissapointed that I was not able to stay longer and see him make his paste !On a beautiful summer evening,I took the train to meet the legendary Stefano at his work.He gave me a tour of his kitchen and shared his enthusiasm and love of Pizza (and new Fridge !)In final,I would just like to thank particularly Andrea,Teo and Stefano for your help and advice on this forum, which has allowed me to begin a dream. For the past three weeks I have experienced nothing but friendliness and happiness in my travels.Grazie+Pace.

Thanks for "grazie", David. As I said you, I'm sorry I cannot speak english, but I promise you I'll learn it, and the next time we can meet in a good neapolitan pizzeria to speak more and best not only about pizza. See you as soon as, I hope that your experience in Rome can be good to begin something new. But... "The boss"?

Ah!The Boss,San Siro.........Spectacular!
In Rome i tried the following Neapolitan style:
Pizza Re,Pizza in Blu,Addo Masto and Gusto. Also in Trasteverre,Da Poeta (Roman Style).I liked Addo Masto as much for the atmosphere as the Pizza (memories of Naples !),
                            Ciao,
